I know, I know. The girl who hates to cook is posting another random recipe. But the good news is, you can guarantee that if this girl is taking time to post a recipe, it must be super easy and tasty! Allow me to give you a little background information before I share this surprisingly scrumptious, quick and easy, no bake, chewy, peanut butter granola bars recipe. Recently, I had to make some major changes to my diet for health reasons. No more Cherry-Vanilla cokes or milkshakes for this girl. Insert giant, crocodile tears here. But the good news is, since I altered my diet, I have found an energy and pep in my step I haven’t felt in a long time.
I am addicted to peanut butter. No really, addicted is totally accurate. I love it in every form, especially in my desserts. Yum! When I changed my diet, the old-faithful brand I had been consuming since childhood was no longer an option. RIP JIF Peanut Butter. It was then that I began the search for a completely all-natural peanut butter I actually liked. I was not impressed with many of the brands I tried. This is devastating when you barely ever miss a day of at least one spoonful of this creamy deliciousness. But at last I found it, randomly on accident.

A fairly new brand, Pic’s Peanut Butter, reached out to me to try their peanut butter and share it if I loved it. I was skeptical but decided there was no harm in trying it. Well, friends, I did LOVE it! Literally the only ingredients are peanuts and a little bit of salt. I like my peanut butter creamy and was stoked to find out they have a creamy version with only these two ingredients. Friends, I don’t know if it’s the area where these peanuts are grown or what, but this peanut butter tasted so much better than the other all-natural brands I had tried. My son who loves peanut butter (like his mama) even said it was really good… and that’s saying something when a picky six-year-old loves it!
Chewy Peanut Butter Granola Bars
I am using Pic’s peanut butter in everything now, including these easy, yummy peanut butter granola bars I’m sharing with you. If you are looking to eat cleaner and healthier but not sacrifice taste, then this recipe is for you
These chewy peanut butter granola bars satisfy my sweet tooth without packing on pounds or unwanted add-ins. Try them out, and let me know what you think!
- 1 cup Pic's peanut butter (or your favorite brand)
- 1/4 cup honey
- 1/2 cup canola oil (or coconut oil)
- 3 - 3 1/2 cups old fashioned oats
- dark chocolate chips (as much or little as you want)
- In a medium pot, melt the peanut butter, honey, and oil together over medium-low heat and stir until smooth.
- Remove pot from stove and stir in oats.
- Pour the mixture into a parchment paper- lined 9x13 baking dish. Spread evenly.
- Add chocolate chips evenly across the top and press them down with a spatula.
- Refrigerate for at least 2 hours and then enjoy.
